Oatmeal Recipe
Before the advent of insulin as a treatment, physicians asked their diabetic patients to eat oatmeal. It is surprisingly effective at bringing down hemoglobin A1C levels, even if one only eats oatmeal once in a while. Learn more about this from Dr. Greger in this podcast or Youtube video. Rolled oatmeal is extremely easy to prepare and it tastes great.
Here’s my recipe:
Rolled Oatmeal
In a Pot, add
- 2 cups of any milk (I use oat milk, which tastes great and is a good source of calcium)
- To speed up the process, I microwave the oat milk for two minutes in a Pyrex measuring cup before pouring it into the pot.
- 1 tsp vanilla
- 1 tsp cinnamon
- Optional additions:
- A pinch of nutmeg
- 1 Tbsp almond butter
- 1 Tbsp maple syrup
- Bring the pot to a boil, then add 2 cups of rolled oats
- Cook for 3 minutes while mixing with a spatula
Serving
- Add sliced banana or any berries
- Leftovers hold up well for 2-3 days in the fridge. Just add oatmilk or other milk and microwave for 40 seconds.

Steel-Cut Oatmeal
Steel-cut oatmeal tastes even better than Rolled oatmeal in my opinion. It takes longer to cook than rolled oats, but only requires about 5 minutes of prep time and another 30 minutes in an InstantPot. Here’s my recipe:
Instant Pot inner pot:
- Add 2 cups boiling water
- Add 2 cups oat milk (after heating in microwave for 2 minutes)
- Add 2 tsp vanilla
- Add 1 Tbsp maple syrop
- Add 1 tsp cinnamon
- Pinch of nutmeg (skipped on 5/12/24)
- Add ½ tsp salt (skipped on 5/12/24)
- Add 2 cups of steel cut oats
Cooking/Warming
- Cook on custom setting with high pressure for 4 minutes, switch off “keep warm”
- Takes 7 min to preheat (used boiling water/milk)
- Takes 3 minutes on high pressure cook setting
- Let it sit for 20 minutes, then force the natural pressure release
Serving
- Wash fruit (blueberries, raspberries or sliced bananas)
